Cycling - did I miss it while on vacation?

I have 55 gallon started June 15 with 35 lbs live rock. I was gone for 7 days and I'm wondering if I could have missed the cycling. I tested before I left and NH4 was .25, Nitrite was 0. When I returned, Nitrite was 3.0, NH4 0, and Nitrate 40. Did I miss the NH4 and Nitrite spikes while I was gone? How high do the levels get during cycling and how long do they stay up?

Seems to me you are seeing them...

Ammonia is now 0
Nitrites are now 3
Nitrates are now 40

I would keep doing things until your nitrites are also 0.

Remember once you add fish and corals you will have another mini cycle.
