I had 2 thanksgivings. Lol. One on Wednesday night when I thought my family would go out of town while I stayed...prompting me to make the feats 1 day early (incidentally, they ended up staying due to poor weather lol). 2nd tgiving was today at my brothers
I deep fried three of those turkeys in that pic Yummy! Happy Thanksgiving!
I worked from 6am to midnight....after getting off at 11:45pm the 26th

OOoooh..cherry smoked. Never had a smoked turkey. How long do you smoke it for? Those thighs are HUGE!
I always brine my turkey overnight, stuff it with an onion, apple, and rosemary, then roast it. As an overkill, I inject butter into the meat, and then push air between the skin and meat for crispy skin! I do baste with white wine and olive oil just so get extra juices for gravy. Brined turkey doesn't release much drippings into the pan. Basically I do everything you are not supposed to do with brined turkey LOL
It was smoked for 5hrs. I took the backbone out of it (spatchcocked), it is just the angle of the picture that makes the thighs look bigger.
I rubbed it with honey. Dry mix was brown sugar with a dash of other spices. I didn't inject it with anything.
This was done in my electric smoker (mes) and am very impressed with the little machine.
First time you smoked a turkey? I'd like to try it with chicken one day. Now, to just get a smoker... lol
