So I am sitting at a suhsi bar last night and my wife says "what do you recommend?" The sushi chef says "live scallop". He pulls a giant scallop out of a cold bucket of salt water and holds it up. The shell is almost as big as a frisbee. The scallop itself is as big as a hockey puck -no exaggeration. MmmmmmmmmMM-MM! He made the other meat around the scallop itself into a sweet salad mix. Never thought I'd find myself eating a scallop --alive.

Wow,...which sushi place did you go to? My favorite one in Arlington changed it's name and I never went back (Matuba on Columbia Pike...I think it's now named something very similar to Matuba).

I'll confess. I've never tried sushi. Just something about raw fish I guess.
But how can somebody that serves up raw fish be called a chef?

This is why when I first took my husband for his first ever sushi 12 years ago, I took him to a very reputable place. Not some dumpy place with cheap crap sushi. He fell in love at first bite. Sushi is why he can never really go all the way vegetarian. He will not give up fish.

Most people don't know this but almost all sushi is frozen to -6 F for 72 hours and this kills all parasites. Its required by health code. There are some exceptions like raw oysters. A good sushi chef knows how to inspect the seafood.
