Has anyone seen palys do this? If so, why?
Can you tell me about your lights? I'm not 100% sure but have a paly frag doing the same under too much light.I moved mine lower to see if they will do better.
I've had them do that in the past, I don't know why. Maybe it's taking a dump. But it never lasted long and everything was fine after.

Only one polyp was like that when on the sand now I have two since I've moved it to my frag rack.
I have one type of green paly with about 5 heads that has always been like that. Tons of other palys/zoas in the tank with less/more flow and light. Going on a couple years in 2 different tanks with different lights, I just chocked it up to that's the way it is.
