Awesome looking picture, my urchin got banished to the sump after stinging me and knocking everything off! lol
 
Some species will eat sessile invertebrates like feather dusters, coco worms or clams. They also eat other little critters they might find in the sand bed and around the rocks.
 
Your lfs should have dried seaweed. Its very important for many fish to eat the seaweed. But if your lfs truly doesnt carry it, then you can actually get dried seaweed in many grocery stores in the asian food section. Just get the unseasoned variety.
