Which, if any, metals are aquarium safe?

I know some are obviously not.. copper and iron etc

I'm just looking at various types of probes for measuring water quality (nitrates, temp, salinity etc) and nearly all have metal as part of the probe

Any ideas?

I'd think titanium, aluminum, and high quality stainless are the only ones.

I have surgical grade stainless I "borrowed" from the hospital and it rusts up pretty quickly. Doesn't take but 3 or 4 exposures and it's pretty well trashed.
 
I would think that any quality probe is going to be made of a material that is safe for use in the aquarium, but as already stated, I believe its mainly titanium, aluminum, and stainless. I believe that like grounding rods, a lot of the probes are made of Titanium
