Bean's overflow system

ok so most ppl on here have seen the Bean's overflow system located at BeanAnimal's Bar and Grill - Silent and Fail-Safe Overflow System ...well question i have is in the elbows at the top of the system. Both of these downturned elbows seem to me that if they were to lose siphon then there would be no way of getting them started again due to the 90 degree elbow. Perhaps I am wrong so that is why I am posting it on here. In my logic seems that this would be setting up for major use of the emergency overflow. Just seems that the downturn would be a flaw. Can anyone shed some light on this
