How this for a unit for installing under my kitchen sink? Now i can just turn it on when i want to fill the drinking water or tank water only right?

Now do i have to have 2 containers when its running? One for waste and the other for regular water?

How easy is it to use and install?

The instructions are hard to understand, but so many people on this site have the unit, we can help you out there. Once you get past the instructions, it's very easy to install and use.
